School is back and we’re all in go go “mom” mode. We have everything scheduled and calculated for the family. The kids activities are planned and organized. They have shiny new school clothes and lunches packed with care and love.
But we forget… well at least I forget, to think about myself and my own lunch. It’s amazing that I can prepare 3 meals a day and the only one I sit down and eat is our family dinner. So here’s to taking a few extra minutes each day to make sure we moms don’t “forget” to eat a healthy lunch too.
A few quick and easy (and healthy) lunch options for momma’s lunch box. These lunches require almost no prep. The grocery list should get you through about 5 days by repeating meals. Of course you can buy extra and prepare these lunches for the entire family but the list below is just for you!Veggie Patch brand) 1 box Trader Joe’s frozen organic brown rice ½ pound deli turkey breast One package mini pita breads 1 small bag baby carrots 1 bottle of Soy Vay Very Teriyaki Sauce roasted red pepper hummus (or whatever flavor is your fav) 2 avocados 1 small basket of cherry tomatoes 1 package edamame Organic Girl Super Greens 1 bunch grapes Oranges 1 package large (wrap size) tortillas the Mediterranean lunch Veggie Patch falafel chickpea balls roasted red pepper hummus mini pita bread 1/2 cup grapes 1/2 cup baby carrots Prep: After warming the falafel chickpea balls in your microware based on box instructions, place all ingredients on your plate (or in your lunch box) and use the hummus as dip. Enjoy. the Wrap lunch 1 large wrap size tortilla 1 bunch of Organic Girl Super Greens ½ avocado, sliced 3-5 cherry tomatoes, sliced roasted red pepper hummus sliced deli turkey Prep: Warm your tortilla in the microwave for 15 seconds. Spread hummus in a thin layer on the tortilla. Place turkey, sliced avocado, sliced cherry tomatoes and greens on top. Wrap like a burrito. Grab an orange for dessert. Enjoy. the Veggie Bowl lunch 1-2 cups brown rice 1 cup Organic Girl Super Greens ½ avocado 4-5 cherry tomatoes 5 baby carrots 1 handful edamame Soy Vey Teriyaki Sauce (I totally realize this is a marinade but it’s delicious and an easy “no prep” rice bowl topping) Prep: Heat rice in microwave (3 min) as instructed. Slice avocado, carrots & cherry tomatoes. Top rice with sliced veggies as well as greens and edamame. Drizzle Soy Vey sauce on top to taste. Enjoy.
