My sister whipped together a Belgian Endive & Arugula Salad the other night and it was so delicious I had to share. This salad is a great reminder that simple, fresh ingredients always taste the best.
We had it as a side but if you throw grilled shrimp on top, it would be the perfect casual (and elegant) dinner.Belgian Endive & Arugula Salad Ingredients 7 endive 5 oz chopped arugula 3 tablespoons champagne vinegar 1/4 cup olive oil 1/4 finely chopped shallot 1 teaspoon ground sea salt 1 teaspoon fresh ground pepper 8 oz fresh, crumbled gorgonzola cheese Prep: 1. Remove and wash the outer leaves of the endive and cut leaves into 2-3 pieces. 2. Wash and chop arugula into small pieces. 3. In a large salad bowl, whisk together the vinegar, shallot, salt, and pepper. 4. While whisking, slowly add the olive oil until the dressing is emulsified. 5. Toss endive & arugula in the dressing. 6. Sprinkle salad with the fresh crumbled gorgonzola. 7. Serve Immediately. optional: If season permits, add fresh BBQ corn for a bit of sweet flavor.
