Kale & Spinach Chicken Salad with Hummus

My family and I decided to reset our health to start 2013.  The challenge, of course, is having the healthy stuff be fast and easy.  This has been my “go to” dish and I just can’t get enough of it!

The hardest part about eating fresh is how much food you have to buy and prep.  This dish takes a little preparation but once the chicken is cooked, you’re good to go for 2-4 days after.  It hits the spot!

Kale & Spinach Chicken Salad with Hummus

Serves 1


2-4 tablespoons humus (my favorite is Whole Foods Lemon Hummus)

2-4 leafs of dinosaur kale

1 cup spinach

1 tablespoon sesame seeds

1 tablespoon fresh lemon

1 tablespoon olive oil

1/2 tablespoon seasoned rice vinegar

salt & pepper to taste


1.  Prepare our Father’s Day Grilled Chicken, set aside, and store remaining chicken.

2.  Chop kale & spinach into thin slices

3.  Whisk together fresh squeezed lemon, olive oil, seasoned rice vinegar and salt and pepper to taste.

4.  Toss kale, sesame seeds and top with Whole Foods Lemon Hummus and Chicken.

Although I feel like I’ve barely recovered from the holidays, I’m actually quite excited for Valentine’s Day this year.  How delectable and darling are these new Valentine Gummy Hearts from William Sonoma?  I’m gonna have to order these treats right away…

I’m off to sunny San Diego tomorrow for a client installation.  I can’t wait to get this house completed.  We went with bright happy colors and patterns… perfect for the cheerful family to whom it belongs.  I’ll be sure to share some snaps of the installation via instagram.

It was fun to get an email from ELLE magazine yesterday with shots of Ginnifer Goodwin’s Los Angeles home, which is featured in their February issue.

Ginnifer’s home seems to have the same fairy-tale romantic vibe as the television series in which she stars, Once Upon A Time.

Lauren Adams is a fabulous artist from Fairmont, West Virginia with whom I had the great pleasure of working during a recent design job in San Francisco.  I instantly fell in love with her abstract work and the way she combines texture and colors in such a beautiful and understated way.  When my client stated she wanted her dining room to be “clean and modern” but, of course, simultaneously warm and inviting… I just knew featuring Lauren’s work was the answer (dining room below).


To be honest, I can’t remember how I originally came across Lauren’s work.  But when I reached out to her, she was incredibly approachable and excited to work with me on the project.  Lauren even raced to the gallery that was having an exhibition of her work to pick-up and ship the piece in time for my installation!

Apparently, I’m not the only one catching on to Lauren’s talent.  In fact, she was featured in West Elm‘s 2012 Summer catalog and she has been featured in many exhibitions including her own solo exhibition at The Slingluff Gallery in Philadelphia, PA, The Redbrick Gallery in Martinsburg, WV and Annex Gallery in Charleston, WV.


I can’t wait to watch Lauren’s career unfold and I am excited to profile her as my latest Artist Highlight.  Here are 5 things that Lauren loves the most…

I snapped this photo at the California Academy of Sciences in San Francisco, one of my boys’ favorite places to visit in the city.

The sign was posted near a drinking fountain which made it really resonate with me.  I’m as guilty as everyone else for spending a fortune on bottled water and just assuming the water was better for me.  I think this was a great reminder to fill up a Canteen and skip the wasted plastic.

We got back yesterday from a fantastic family trip to Lake Tahoe.  Skiing, fresh air and loads of design inspiration got me thinking about the Cabin Style home.

There is definitely a fine line between classy and tacky cabin style, but MWA Architects, based out of Truckee, California, seems understand high quality building and design.  MWA calls itself a casual down to earth company… and as any good snow country firm, notes on their website that they “play hooky on powder days.”  From the looks of these amazing homes they have designed, I can’t image they play hooky often.  MWA creates truly spectacular Cabin Style Homes.
